Ingredients
½ cup jasmine rice
2 eggs
½ cup crispy carnitas
½ avocado, sliced
½ cup pico de gallo
Hot sauce of your choice
Cilantro, for garnish
Instructions
Cook rice in rice cooker or over stove.
Crack eggs in pan, season with salt and pepper, and cook to desired doneness.

Assemble the bowl: Put cooked rice in the bottom of a wide, shallow bowl. Place eggs on one side. Slice avocado thin, then spoon out next to the eggs. Place carnitas next to avocado, and then place pico do gallo in between eggs and carnitas. Drizzle hot sauce over everything, garnish with cilantro, and enjoy!
