Ingredients for Cauliflower Steak
1 inch thick cut from the middle of large head of cauliflower
1 teaspoon olive oil
Salt
Pepper
Ingredients for Chimichurri
2 cups of fresh cilantro (stems and leaves), finely chopped
1 cup parsley, finely chopped
3 cloves of garlic peeled
1 large shallot
2 tsp red pepper flakes
2 tsp of dried oregano
2 tbsp red wine vinegar
1/2 - 1 cup olive oil
Salt and pepper to taste
Ingredients for Whipped Goat Cheese
1 small log of goat cheese
4 tablespoons olive oil
2 tablespoons of water
Instructions
Lightly rub all sides of cauliflower steak with olive oil, then sprinkle with salt and pepper.
Heat large skillet over medium-high heat. Add 2 tablespoons of olive oil to pan, and place cauliflower in pan, face down. Cook for 7-8 minutes on one side, then flip when golden brown, and cook the other side for 4-5 minutes until center is fork tender.
Make the whipped goat cheese: Add goat cheese, water, and 2 tablespoons of olive oil to small food processor, and blend until smooth.
Make the chimichurri: finely chop cilantro, parsley, garlic, and shallot, and add to a bowl. Add olive oil and red wine vinegar, and season to taste.
Plating: smear a generous amount of the whipped goat cheese in a circular pattern on a plate. Place the cauliflower steak on top, then top with chimichurri.
Serve immediately!
